This product from Hoosier Hill Farm has changed my mind about egg powder. Fortunately, I had come here to Amazon to see reviews on the product before buying it and there were enough claiming "real egg taste and texture" to get me to go for it. While I write this, I am taking bites of scrambled cheddar cheese eggs with my favorite seasonings. These are eggs, no doubt about it!
BIG GIANT NOTE: The label on this says the ratio is 2tbsp egg powder to 2tsp of water. it is actually 2tbsp egg powder to 2tbsp of water for a 1 egg equivalent.
I made one egg when I received the package by using 2 tbsp of powder to 2tbsp of water (thanks to the reviews here). Nothing was wasted on trial and error. I tried my first egg on my cast iron stovetop griddle and heated it slowly as many here suggested. I got a mini omelette, the right color and texture AND it tastes and feels indistinguishable from fresh eggs. I did not add anything but water. For my scrambled eggs, I use the same 2tbsp of egg powder and the same two tbsp of water, but add an additional tbsp of milk (or half and half). Eggs will be runny, but eventually you will see them start to look like scrambled eggs. When done, they are perfect.
The trick with mixing these eggs is mixing thoroughly with a whisk or spoon, breaking up undissolved clumps by smashing them against the side of your mixing cup/bowl, and scraping and stirring. Once the powder is mixed thoroughly, you use it like any other egg.
UPDATE: 4/3/2014
Still loving this product! I decided to invest in a stick blender that you can stick into a measuring cup to blend the contents. With it, I get flawlessly blended eggs with no lumps. When blended with a blender, these eggs come out much more fluffier. You can also "scramble" them in the microwave using the same cook times you would for microwaving regular fresh eggs. These eggs make great egg salads, awesome omelettes, can be used as dry powder in baking (without blending first), I love these. Will definitely order more when they are gone.
DO NOT DROP THESE EGGS ON A PRE-HEATED SKILLET.
Heat the eggs with the skillet. Doing it any other way will ruin the eggs.
03/2016 UPDATE!! I have been using this product in place of my fresh eggs for baking... I have not noticed a difference in any of my baking recipes. We made sugar cookies today and they turned out perfect...the recipe called for four eggs and I did not want to use my last few fresh eggs. I complained about the price after purchase...but now I have used this product quite a bit and there is still half the container left...it is very well worth the price to have in the pantry...100% must have.
This solved my problem. They're perfect for every use (except sunnyside up). The package says 2 tbsp of egg and 2 tbsp of water. That works great for one egg. If you need more than one egg, add one more tbsp of water for each 2 tbsp of egg, otherwise you wind up with a pudding mix.
Try this if you don't use a lot of eggs. There's no worry about old eggs, and it tastes great!
I'm giving 4 and not 5 stars due to the description on back 2 Tbsp powder + 2 Tsp Water = 1 Egg. I just can't get this to work out. I went back and reread it and also doublechecked my elementary school knowledge of what a Tbsp and Tsp is just to make sure.
It's not even close to what I have to do to get a normal egg. I had to do about 2:1 ratio of water to powder.

The only thing it can't do, since it is whole powdered eggs, is that we can't use this product for recipes that requires only egg yolks or only white eggs.
I also found that it works at its best in recipes that need up to 3 eggs; after more than 3 eggs, it works a bit less better (but still much better than most egg replacers products out there, including the Bob's Red Mill's Egg Replacer that I tested beforehand).
Finally, it also works marvellously as omelettes or scrambled eggs, with no major differences in taste and textures.
Overall, great product, comes at about 30 cents more per eggs than buying them at store, but considering that we can now enjoy all our baking products without getting sick everytime from contaminated eggs, and the baking products don't need any adjustments or vegan products, and taste/look just like they should, is worth the price.
P.S.: I have read some negative review about the expiration dates, but for me, both times that I brought this product over the last 3 months, the expiration date has been for another 2 years.
Not overly keen on the way a plain omelet turned out when I tried making one with it. I found the texture slightly rubbery.Possibly I did not do it right. It's the only reason I did not give it 5 stars for flavor.
